Cowboy Caviar

This fresh dip is quick and easy to make. It's great with tortilla chips or served as a side salad.

Ingredients

  • 1 Bell pepper I prefer half of a red and half of a yellow.
  • 1/2 of a Red onion
  • 3 Tomatoes
  • 15 oz Black beans
  • 1 1/2 cups Frozen corn
  • 2 Avocados
  • 1 bunch Cilantro
  • 1 Jalapeno pepper optional

Dressing

  • 1/3 cup Olive oil
  • 2 tbsp Red wine vinegar
  • 2 tbsp Lime juice
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp Sugar
  • 1/4 tsp Garlic powder
  • Chili powder to taste - optional

Instructions

  • Deseed and dice the bell pepper, tomatoes, and jalapeno (if using). Dice the red onion. Finely chop 1/2 of a cup of cilantro. Dice the avocado (if not eating right away, wait to do this until right before serving so it doesn't go brown). Rinse and drain black beans.
  • Put the above ingredients in a bowl and stir to combine them.
  • Add the dressing ingredients to a separate bowl and whisk together.
  • Mix dressing into bowl with main ingredients and stir well. Refrigerate until ready to serve.

Notes

This is great as a dip with tortilla chips. Or you can serve it as a side salad with your main dish.
